Play around with seasonings to suit your entree. Try premixed spice blends such as Cajun, Italian, Curry, even ranch! Use a combined 1T seasoning.

Ingredients
- 4 medium Russet potatoes scrubbed
- 1 T sugar
- 2 T olive oil
For ORIGINAL FRIES, also add:
- 1/2 tsp cumin
- 1 tsp chili powder
- 1 tsp kosher salt
- 1/2 tsp black pepper, freshly ground
For GARLIC PEPPER FRIES, also add:
- 1/2 tsp black pepper, freshly ground
- 2 1/4 tsp garlic salt
- 1/4 tsp Parsley

Instructions
- Cut potatoes into 8 wedges each.
- -OR- Slice potatoes with a mondoline using the largest setting. Cut these slices into "fry size."
- Sprinkle sugar over sliced potatoes. Set aside for 20-30 minutes. Drain in colander and pat dry.
- Preheat oven to 400. Mix desired spices in a medium bowl. Add olive oil and combine well.
- Add potato wedges to seasonings and toss to coat.
- Lightly crumple some aluminum foil and place on a baking sheet. Spray with cooking spray and then arrange potato wedges on foil.
- Bake at 400 for about 40 minutes. Serve with ketchup, fry sauce, Ranch dressing, honey mustard, barbecue sauce, whatever you like to dip your fries in!
