Ingredients
- 2 tablespoons olive oil
- 1 garlic clove peeled and minced
- juice of 1 lemon
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 1/2 cup diced red onion
- 2 cups diced cucumber
- 2 cups diced tomatoes
- salt and pepper to taste

Instructions
- In a large mixing bowl, gently toss together all of the ingredients. Add salt and pepper to taste. Let sit 10-15 minutes before serving to allow the flavors to meld.
